Editors’ Note: Since our visit to Bertram Smoke Haus, owner Jim Wallace has pulled up stakes—and his pits too—and said goodbye to the hundred-plus-year-old former mercantile store and lumber company he called home. He found new digs, renamed his joint Bertram Bar B Que, and is still producing the same great mesquite-smoked brisket, ribs, sausage, and chicken that so inspired us in 2008.
